Location: Inside Fairmont Chateau Lake Louise

Hours: Open only for dinner from 5:30pm - 9:30pm

Price: $$$$

To start: complimentary pretzel rolls with butter

Appetizer: 'Käsespätzle' Cheese Spätzle $19

This was my first time trying such an authentic European dish. It originates from Germany, and is typically made with a type of pasta called spätzle, grated cheese and layered with fried onions.

Walliser Stube's version uses braised cippolini, gruyère, kasseler pork and kraut, topped with microgreens. It tasted like a luxurious version of mac and cheese. I loved how gooey the cheese was. The portion looked small but was actually perfect because of how rich and creamy the sauce was. 8.5/10

Main Course: 'Gebratenes Lachsfilet' Salmon Fillet $44

I am an avid lover of salmon so I had to give this a try. It is a piece of ASC certified salmon on a bed of caraway & fennel seed braised leeks, with carb ravioli and tarragon crème. The salmon skin was perfectly crispy, and the fish itself was cooked just right. It was not dry at all. The leeks were so tender they melted in my mouth. The crab ravioli was good, but I found the crab filling a little dry and the pasta a little too al dente. The tarragon crème complimented the salmon though. 7/10

Dessert: Chocolate fondue

They claim they have the 'best fondue outside of Switzerland', and since I did not try their cheese fondue, I had to give their chocolate fondue a try. It is made with melted toblerone chocolate, and paired with fresh fruit, madeleines and vanilla cream puffs. The melted chocolate was honestly the best thing I have ever had. Since it was milk chocolate, it was rather sweet, but incredibly smooth. There was even a hint of nougat in it. I was very tempted to just drink it straight up. 9/10
